The stripes are so incredibly fascinating I can stare at them all day.

Actually, I can stare at them as long as I have a ginormous spoon slathered with PB in front of my face.

Healthy Homemade Wild Jungle Peanut Butter

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Yield: 2+3/4 cups

Healthy Homemade Wild Jungle Peanut Butter

Ingredients

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Lay the peanuts in a single-layer onto two large baking sheets.
  3. Oven roast the peanuts for approximately 20-25 minutes total, but stirring around the peanuts at 5 minute intervals (peanuts should get slightly darker in color, but not burnt!)
  4. Let cool on the sheets.
  5. Grind the peanuts in a large food processor until it's smooth and buttery (8-12 minutes). Scrape down the sides of the bowl when necessary.
  6. Add the stevia and salt and grind for another minute.
  7. Store in a tightly sealed jar in the fridge.

The nutrition facts for wild jungle peanuts are pretty much the same as regular peanuts.  The real difference is seen when comparing the ingredients of this homemade PB with storebought PB.  Storebought PB often contains hydrogenated oils (aka, deadly trans fats), sugar and way too much salt…  but not this one!

You can feel good about making, serving and eating this homemade peanut butter.  It’s so good, you’ll eat it by the spoonful!
