I’ll admit, I’m not that well-versed in using dates as a sweetener…  I think this was my first time soaking dates?  This recipe was kind of like, “operation throw-everything-in-a-blender-and-hope-for-the-best”  😉

To my surprise, though, it worked!  Not only did it work, but it worked damn well.  I could eat this Healthy Date Caramel Sauce by the spoonful.  I just want to pour it in my mouth.

Dates provide SO much sweetness and don’t have too strong of a flavor, so they won’t overpower whatever dish you’re making.  I really want to start incorporating more dates into my recipes…  what do you think?  The only annoying step is that you always have to soak the dates beforehand so that they soften up and are easier to blend.  But that’s not all that annoying I guess.  Because you’re literally just a few minutes away from sweet, sweet goodness  🙂

This Healthy Homemade Date Caramel Sauce is super smooth, sweet, and FULL of caramel flavor.

It’s certainly one creamy, dreamy, heavenly concoction.  And best of all, it’s refined sugar free, low fat, vegan, and doesn’t require any cooking whatsoever!

Healthy Date Caramel Sauce

Servings: 20 servings
Prep Time: 1 hour
Total Time: 1 hour
This 4-ingredient Healthy Date Caramel Sauce is so silky smooth, creamy, rich, and sweet (everything you'd ever expect from caramel), that you'd never know it's vegan, dairy free, paleo, and low fat with zero sugar added!

Ingredients

  • 2 packed cups (300g) Pitted Dates
  • 2 cups Boiling Water
  • cup Light Coconut Milk (canned)
  • 1 tsp Vanilla Extract
  • 1 tsp Natural Caramel Flavor **
  • ¼ tsp Salt

Instructions

  • In a heatproof bowl, add the dates and pour the boiling water on top.  Let soak for 45 minutes.
  • Reserve 1 cup of the soaking liquid and drain the rest.
  • In a high-speed blender (I used my NutriBullet.  A Vitamix would work too!), add the soaked dates and ½ cup of the reserved liquid.  Puree until smooth, adding more water as needed.  In total, I needed ~¾ cup.
  • Add the coconut milk, vanilla extract, caramel flavor, and salt, and puree until very smooth.
  • Pour into a jar, seal tightly, and refrigerate to store.  Keeps for ~2 weeks.

Recipe Notes

**If you don't want to use this, I suppose you can use more vanilla instead.  You just won't have as strong of a caramel flavor as I got.
