These little orbs of matcha deliciousness make my mouth water and heart melt.  Every time I grab one of these no bake energy bites I yell, “I LOVE YOU SO MATCHA!”

I think I’m beginning to annoy my neighbors.  Hmmm…

Healthy Matcha Green Tea Energy Bites

These Matcha Green Tea Energy Bites are soft, fudgy, and sweet.  You'd never know they're sugar free, gluten free, dairy free, and vegan too!

Ingredients

Instructions

  • In a stand mixer bowl fitted with a beater attachment, add all of the ingredients.  Mix until completely even, scrape down the sides of the bowl, and mix one last time.
  • Scrape down the sides of the bowl.  Cover and refrigerate overnight.
  • Use a cookie scoop to portion the dough out onto a plate.  Roll the dough scoops into balls.  Serve and enjoy, or store in the fridge.

Recipe Notes

The recipe above is my revised recipe. I originally posted a Matcha Green Tea White Chocolate Energy Bites recipe back in 2016, but wanted to simplify the recipe.  Just in case you wanted to see the previous recipe and/or the changes I made, I’m providing the old recipe here:
  • ½ cup Macadamia Butter (I used homemade! Cashew and almond butter also work)
  • ⅔ cup Unsweetened Vanilla Almond Milk
  • 1 tsp Vanilla Creme-Flavored Stevia Extract
  • 1 tsp Vanilla Extract
  • heaping ¼ tsp Salt
  • 1¼ cups Quinoa Flakes
  • ½ cup Quick Cooking Oats
  • 3 tbs Coconut Flour
  • 1 tbs Matcha Powder
  • 1 cup Chopped White Chocolate (I used homemade!)

I originally added white chocolate to the recipe because the matcha + white chocolate combination is UNREAL.  However, when I got around to making the recipe a couple weeks ago, I realized I didn’t have any of my homemade white chocolate on hand…  so I omitted it and it was A-OK!

Yeah, I guess you could say I have a pretty well-ROUNDED diet.  Heh heh heh, get it?  😉

  2. Lol I love your puns! These bites look really yummy. I love green tea, how is the taste of matcha different? Also where can you buy it for cheap? I saw it at Sprouts but it was 14 dollars for a tiny jar. Can you blend green tea and make it yourself?

    • Matcha is much more earthy and grassy tasting compared to regular green tea. It’s also much more green in color and contains more antioxidants than green tea. It’s very expensive, but totally worth it in my opinion (kind of like how high quality chocolate is better than cheap/crappy chocolate) 😉
      I suppose you can make Green Tea Energy Bites by opening up packets of green tea and grinding the tea leaves into a powder, but the color and flavor won’t be the same. I’m sure it’ll still be tasty though! 🙂
