Healthy Peanut Butter Baked Oatmeal

This healthy Peanut Butter Baked Oatmeal is soft, light, fluffy, and peanut buttery, yet packed with protein, fiber, and healthy fats, and none of the added sugar! It will become your new breakfast staple -- it's comforting and delicious, yet sugar free, gluten free, and vegan!

Ingredients

  • 2 cups Unsweetened Vanilla Almond Milk
  • 185g (¾ cup) Unsweetened Applesauce
  • 64g (¼ cup) Natural Peanut Butter (no sugar or oil added)
  • 2 tsp Liquid Stevia Extract
  • 60g (½ cup) Peanut Flour
  • 14g (2 tbs) Ground Flaxseed
  • 2 tsp Ground Cinnamon
  • ¾ tsp Salt
  • 192g (2 cups) Old Fashioned Rolled Oats
  • 1 tsp Double-Acting Baking Powder

Instructions

  • Preheat the oven to 350 degrees Fahrenheit and line a 9″ brownie pan with parchment paper both ways.
  • In a large bowl, whisk together the almond milk, applesauce, peanut butter, and stevia extract.
  • Whisk in the peanut flour, flaxseed, cinnamon, and salt.
  • Fold in the oats and baking powder.
  • Pour batter into the prepared pan and bake for ~30-40 minutes, or until the surface springs back when tapped.  Let cool slightly, then slice.  Serve warm!

Wow, can you believe it?  How can you go wrong with that nutrition label?  I mean, seriously…  only 170 calories and 7g of healthy fats, plus 4.5g of filling fiber and 8g of satiating protein.  Oh, and zero added sugar too!  You are totally allowed to have an extra slice  😉

      You can substitute the stevia with another sweetener if you like. You can try 1 cup of coconut sugar, date sugar, maple sugar, sucanat, erythritol, xylitol, etc. You can give the batter a taste as you go along, it’s safe because it doesn’t have eggs!

      Hmmm, the maple syrup might make the oatmeal a bit too “liquidy,” but if you want to use it, you can counteract that by adding 1/4-1/2 cup more peanut flour! Hope you like the recipe 🙂

  7. what can i substitute the peanut flour with?

    • Peanut flour is a tough ingredient to replace because it’s so unique. However, unlike the Peanut Butter Oatmeal Cookies you commented on, this baked oatmeal might be able to handle the substitution.
      I would recommend replacing the ½ cup Peanut Flour with 1/2 cup Oat Flour + 2 tbs Ground Flaxseed…
      In total, you will need ¼ cup of flax. I haven’t tried this substitution but I’m pretty sure it will work out just fine! I hope you like the recipe! 🙂

  8. My son is allergic to peanuts and almonds. What could I use to substitute the peanut flour and the peanut butter? Is the cinnamon necessary as well? It’s another allergy of his. Thanks!

    • I’m afraid the peanut flour cannot be easily substituted in this recipe. While I haven’t tried it, you can try using 3/4 cup of oat flour instead 🙂
      Instead of the peanut butter, you can use any other nut or seed butter, such as walnut butter or sunflower seed butter.
      The cinnamon is just there for flavor. If you aren’t using it, I would recommend adding some chocolate chips instead!

      Not sure what went wrong in your batch because every time I made this it turned out great! Did you make any ingredient substitutions? It’d be helpful if you told me what your final product turned out like so I can actually help you — was it not sweet enough for your taste, did you not like the texture, etc…

  13. I found your recipe looking for eggless breakfast because I ran out. I used traditional ingredients, and whatever I had on hand including 1/3c flour and 1c. milk and, almond meal instead of flax seed and added chocolate chips because why not 🙂 It came out wonderfully thank you. I did end up cooking it for 50 minutes. I topped it with fresh banana slices. Also, the batter is really wet for anyone concerned. I am eating it right now and so excited for the stick to your bones new breakfast that I will be serving as a staple. Thank you.

    Hi! I gave this recipe a try, but changed a few things. I used 3/4 cup protein powder in place of the flour (I had peanut butter flavored, but any would work), 1 tbsp honey instead of the stevia, and I used a flaxseed/chia/coconut mix instead of just flaxseed. I then baked for 38 min! They turned out super yummy! Thanks for the idea!
