These dense and chewy Strawberry Shortcake Energy Bites are absolutely delicious.

And did I mention they’re kind of like, totally addicting?  That’s not a problem though, they’re just 100 calories each and made with 100% nutritious ingredients!

Healthy Strawberry Shortcake Energy Bites

These Healthy Strawberry Shortcake Energy Bites are perfect for when you’re craving something fruity and delicious, but want something light and nutritious!

Ingredients

Instructions

  • In a stand mixer bowl fitted with a beater attachment, add the Greek yogurt, macadamia butter, almond milk, stevia extract, vanilla extract and salt. Mix on low speed.
  • While mixing, add the quinoa flakes, then oats, then coconut flour.
  • Dump in the freeze-dried strawberries and mix again.  Scrape down the sides of the bowl and mix one last time. Cover the bowl and refrigerate for 30 minutes.
  • Line a cookie sheet with parchment paper. Use a cookie scoop to portion out the dough and place on the prepared cookie sheet.  Roll the dough into balls.  Serve immediately or cover and refrigerate for later!

Recipe Notes

If you don't have Quinoa Flakes, you can try using all Quick Cooking Oats, but I haven't tried it.

  20. Do you have to use freeze dried strawberries? I can’t find them. Could dehydrated strawberries work?

    • I think dehydrated and freeze dried might be the same thing. But if you’re talking about the gummy kind that’s labeled “dried fruit” it works. Just make sure you don’t get the kind with sugar added!
