Here are a few recipes that still need a bit of work and recipe testing.  Soon enough, they’ll be coming soon to the Desserts With Benefits blog!  (For a list of recipes to try, check out my Pinterest Recipes to Try board)

Chocolate Truffle Pie:

Problem:  I used granulated erythritol in the pie filling and it didn’t dissolve, so even though the filling was DELICIOUS, it was crystallized.

Blueberry Lemon Muffins:

Problem:  The center was sticky and I want a brighter blue color, not faded purple.

Pumpkin Butterscotch Muffins:

Problem:  These are obviously pretty ugly, but they’re also very dense.

Hot Cross Buns:

Problem:  They didn’t rise much so they were super dense bread balls.

.

Banana Bread Blondies:

Problem:  I have made 5 failed batches of these blondies.  The first was cake-like and not banana-y enough.  The second was too dense and heavy.  The third was dry.  The fourth and fifth were too firm and got crumbly the next day.

Lemon Meringue Pie:

Problem:  The crust was too crumbly, the filling was too firm, and meringue “weeped.”

Red Velvet Cheesecake:

Problem:  While this is probably the best cheesecake I’ve ever made, the filling was more of a fuchsia color, not red.

Butterscotch Chip Blondies:

Problem:  These were a little too dry.

.

Grasshopper Brownies:

Problem:  They dried out the next day.
