Ingredients

  • 1 tbs Ground Flaxseed
  • ¼ cup Unsweetened Vanilla Almond Milk
  • cup 100% Pure Pumpkin Puree (canned)
  • 3 packets Truvia Natural Sweetener
  • 1 tsp Pumpkin Pie Spice
  • pinch of Salt
  • ½ cup Old Fashioned Rolled Oats
  • ¼ tsp Double-Acting Baking Powder

Instructions

  • Preheat your oven to 350 degrees Fahrenheit.
  • In a bowl, whisk together the flaxseed and almond milk. Then whisk in the pumpkin puree, Truvia, pumpkin pie spice, and salt.
  • Stir in the oats and baking powder.
  • Scoop the mixture into the ramekin and bake for 25 minutes.  Let cool slightly, then dig in!

What a lovely nutrition label to match such a delicious recipe.  This Single-Serving Pumpkin Pie Baked Oatmeal is my kind of breakfast!

And 11g of filling fiber too — no wonder this cake kept me full for hours!  And I have a record fast metabolism.  This is definitely going to be a staple meal for me for the next couple of weeks.  Yes, weeks.  It’s that good.  I could most definitely eat this every single day.

I’ve said it before and I’ll say it again:  I have a MAJOR sweet tooth.  I will always choose sweet over savory, sugar over salt, dessert over dinner…  you get the picture.

  2. I have this natural inclination to treat every recipe as if it’s single-serving. Definitely NOT the case for most baking recipes, but sometimes I can’t help it! I adore that this delicious baked oatmeal IS single-serving so I can enjoy it all to myself! The pumpkin pie flavor sounds perfect for fall. Then again, I’d enjoy pumpkin pie all year long!
