This Blueberry Lavender Chia Seed Pudding recipe is perfectly sweet and floral, and surprisingly filling! Healthy Blueberry Lavender Chia Seed Pudding

Ingredients

Lavender "Tea"

  • 2 tbs Dried Lavender Flowers
  • 1 cup Boiling Water

Chia Seed Pudding

  • 1 cup Frozen Blueberries (thawed)
  • ½ cup Brewed Lavender Tea (recipe above)
  • cup Unsweetened Vanilla Almond Milk
  • ½ tsp Vanilla Extract
  • 36g (3 tbs) Chia Seeds
  • 3 packets Natural Sweetener (stevia, Truvia, etc.)

Instructions

  • Make the lavender “tea” by adding the dried lavender flowers to a coffee mug and pouring over the boiling water. Let brew for 5 minutes, then strain out the lavender.
  • In a small blender (I used my NutriBullet), add the thawed blueberries, lavender tea, almond milk, and vanilla extract. Blend until completely smooth, then pour into a large bowl.
  • Whisk the chia seeds and sweetener into the bowl, then cover and refrigerate overnight.
  • Enjoy the following day!
