Healthy Oreo Truffles

Servings: 30 truffles

Total Time: 1 hour

Ingredients

  • one batch Homemade Oreos (omit filling, only make the wafers**)
  • 16 oz Low Fat Cottage Cheese
  • 2 tbs Unsweetened Vanilla Almond Milk
  • 2 tsp Vanilla Extract
  • 1 tsp Liquid Stevia Extract

Instructions

  • In a blender (I used my NutriBullet), grind the oreo wafers into a flour.  Pour into a large bowl.
  • In the same blender, add the cottage cheese, almond milk, vanilla extract, and stevia extract.  Puree until completely smooth.  Pour on top of the ground oreo wafers and fold together.  It should form a thick dough.  Cover and refrigerate overnight.
  • The next day, use a cookie scoop to portion the dough and roll into balls.  Feel free to dip the balls in chocolate or serve as is!  Keeps for ~5 days in an airtight container in the fridge.
