Healthy Single-Serving Chocolate Peanut Butter Microwave Cake

Ingredients

  • 1 tbs Ground Flaxseed
  • cup Unsweetened Vanilla Almond Milk
  • ¼ cup Unsweetened Applesauce
  • 4 packets Natural Sweetener (steviaTruvia, etc.)
  • tsp Salt
  • 2 tbs Unsweetened Natural Cocoa Powder
  • 23g (3 tbs) Oat Flour
  • 23g (3 tbs) Peanut Flour
  • 1 tsp Double-Acting Baking Powder

Instructions

  • In a medium-sized bowl, stir together the flax, almond milk, applesauce, sweetener, and salt.
  • Stir in the cocoa powder, then stir in the oat flour, then stir in the peanut flour.
  • Last, stir in the baking powder. Pour batter into a 5" baking dish and microwave for ~5 minutes, or until surface springs back when tapped.
