Enjoy this sugar free and low carb Wild Jungle Peanut Butter anywhere that you would use regular peanut butter -- spread on some toast, top a bowl of oatmeal, in a smoothie, or on a spoon.
Ingredients
4½cupsWild Jungle Peanuts(I bought mine were raw from Whole Foods)
Lay the peanuts in a single-layer on a large baking sheet. Roast at 5-minute intervals, tossing the peanuts between each interval, for about 20 minutes total, or until fragrant. Let cool slightly.
Add the peanuts to a food processor and grind until smooth and buttery, scraping down the sides when necessary (takes about ~10 minutes total).
Add the sweetener and salt to taste. Grind again until smooth. Scoop the nut butter into a jar, seal tightly, and refrigerate to store.
