Healthy Peanut Butter and Jelly Thumbprint Cookies

These super easy, secretly healthy Peanut Butter and Jelly Thumbprint Cookies are white sugar free, low fat, high fiber, high protein, gluten free and vegan, but you'd never know it!


  • 128g (½ cup) Natural Peanut Butter (no sugar/oil added)
  • 92g (6 tbs) Unsweetened Vanilla Almond Milk
  • 1 tsp Vanilla Extract
  • 1 tsp Liquid Stevia Extract
  • 90g (¾ cup) Oat Flour
  • 48g (¼ cup) Homemade Vanilla Sugar (or dry sweetener of choice)
  • 30g (¼ cup) Peanut Flour
  • 1 tsp Double-Acting Baking Powder
  • ¼ tsp Salt
  • ¼ cup 100% Fruit Strawberry Spread (any flavor works!)


  • Preheat the oven to 350 degrees Fahrenheit and line 2 cookie sheets with parchment paper.
  • In a large bowl, stir together the peanut butter, almond milk, vanilla extract, and stevia extract.
  • In a small bowl, whisk together the oat flour, vanilla sugar, peanut flour, baking powder and salt. Dump over the wet ingredients and fold together.
  • Use a cookie scoop to portion the dough out onto the baking sheets. Roll the dough balls between your hands and flatten them between your palms, fixing any cracks on the edges of the cookies if you want.
  • Use your thumb or a teaspoon measure to press in the center of the cookie rounds and fill with about ¾-1 tsp of fruit spread. Bake for ~10 minutes. Slide the parchment off the hot baking sheets and let cool. Serve!
