Healthy Single-Serving Banana Microwave Cake

This fluffy Healthy Single-Serving Banana Microwave Cake is low in sugar, refined sugar free, high protein, high fiber, dairy free, and gluten free too!

Ingredients

  • 28g (¼ cup) Coconut Flour
  • 3 packets Natural Sweetener (stevia, Truvia, etc.)
  • ½ tsp Ground Cinnamon
  • ½ tsp Double-Acting Baking Powder
  • pinch of Salt
  • cup Unsweetened Vanilla Almond Milk
  • 76g (⅓ cup) Mashed Banana (perfectly ripe)
  • 1 large Egg
  • 1 tsp Vanilla Extract

Instructions

  • In a small bowl, whisk together the coconut flour, packeted sweetener, cinnamon, baking powder and salt.
  • In a medium-sized bowl, whisk together the almond milk, mashed banana, egg and vanilla extract.
  • Dump the dry ingredients over the wet ingredients and whisk together to make sure there are no clumps.
  • Scoop the batter into a mug and microwave for ~4 minutes, or until the surface of the cake springs back when tapped.  Let cool, then enjoy!
