Healthy Mango Cardamom Chia Seed Pudding

This Mango Cardamom Chia Seed Pudding is tropical, sweet and addictive. It's unparalleled delicious perfection!


  • 1 cup Unsweetened Vanilla Almond Milk
  • 8 oz Frozen Unsweetened Mango Chunks (thawed completely)
  • ½ tsp Vanilla Extract
  • ¼ tsp Ground Cardamom
  • 3 packets Natural Sweetener (stevia, Truvia, etc.)
  • 5 tbs Chia Seeds


  • In a blender (I used my NutriBullet), puree the almond milk, mango chunks, vanilla extract, cardamom and sweetener.
  • Stir in the chia seeds with a spoon.  Pour the mixture evenly into jars, seal tightly, and refrigerate overnight.  Serve and enjoy!
