Healthy Strawberry Shortcake Overnight Dessert Oats! All the flavor of strawberry shortcake but in oatmeal form, and made refined sugar free, low fat, high fiber, gluten free and vegan.
Healthy Strawberry Shortcake Overnight Dessert Oats
Ingredients
- ¾ cup Old Fashioned Rolled Oats
- ⅔ cup Unsweetened Vanilla Almond Milk
- 1 tsp Vanilla Extract (I used my alcohol-free version)
- ¼ tsp Natural Butter Flavor
- 4 packets Natural Sweetener (stevia, Truvia, etc.)
- pinch of Salt
- ½ cup Frozen Strawberries
Instructions
- In a bowl, stir together the oats, almond milk, vanilla extract, butter flavor, truvia and salt.
- Stir in the frozen strawberries.
- Cover and refrigerate overnight.
- Give it a stir, then EAT!
If you want even creamier oats with a hit of protein, add ¼ cup of Greek yogurt to the recipe. If you’re vegan, feel free to stir in 1-2 tablespoons of vegan vanilla protein powder (I like SunWarrior) plus a splash more of milk.
I think that makes this like, the healthiest breakfast EVA! 100% whole grain, no added sugar, 5g of fiber, 6g of protein… this is what breakfast cereal companies wish they could boast on their cardboard boxes, but can’t, because they’re all full of refined flours and grains, high-fructose corn syrup and preservatives.
Tsk tsk!
I like to top my oats with a drizzle of melted coconut butter. It looks like icing. That, or I stir 1 tablespoon of natural almond butter into the mix before refrigerating overnight. I like the strawberry-almond flavor combo, but adding the almond butter really makes this breakfast more filling and satisfying, while also forming a complete protein 😀

Had this for two mornings in a row. After seeing me eat it the first morning, my husband asked me to make one for him, too. We love it. I could have this 3-4 times a week. (Gotta have my breakfast burrito on Sunday.)

Looks delicious! Just one question. Can I use fresh strawberries instead of frozen?
