Healthy Blueberry Lavender Chia Seed Pudding
This Blueberry Lavender Chia Seed Pudding makes for a great breakfast — it’s full of healthy ingredients such as chia seeds (high in omega-3 fatty acids) and blueberries (high in antioxidants), and it happens to be sugar free, high fiber, gluten free, and vegan too!
I was about to make a batch of my Matcha Green Tea Chia Seed Pudding for like, the billionth time, but decided to try something new. I’ve had a pack of dried lavender flowers sitting in my pantry for far too long *cough about 1½ years cough* so I really wanted to use it in something.
When I used to work at a bakery, we made a Lavender Ice Cream that was tinted a blueish-purpleish-grey thanks to frozen blueberries. Since the recipe wasn’t well written or formulated, I always had to eyeball the amount of blueberries I added. The recipe made 8 quarts of ice cream and called for only ½ cup of blueberries (as well as way too much lavender… it tasted like soap). To color 8 QUARTS of ice cream (that’s 32 cups or 16 pints!) with the slightest hint of grey, you needed to add ~4 cups of blueberries. One day I was cooking the ice cream base over the stove and accidentally dumped in an extra 2 cups or so of blueberries. The color was AMAZINGLY vibrant and purple and the extra blueberries added a nice hint of their own flavor to the mix.
I loved the blueberry-lavender combo so much in the ice cream that I tried it in a healthier format… CHIA SEED PUDDING! And guys, it’s perfect.
If you use too much lavender, whatever you’re making is going to taste like old granny soap. But this Blueberry Lavender Chia Seed Pudding is perfectly balanced in flavor — it’s sweet, it’s floral, it’s 100% delicious satisfaction. It’s hard to put the spoon down!
Healthy Blueberry Lavender Chia Seed Pudding
Ingredients
Lavender "Tea"
- 2 tbs Dried Lavender Flowers
- 1 cup Boiling Water
Instructions
- Make the lavender “tea” by adding the dried lavender flowers to a coffee mug and pouring over the boiling water. Let brew for 5 minutes, then strain out the lavender.
- In a small blender (I used my NutriBullet), add the thawed blueberries, lavender tea, almond milk, and vanilla extract. Blend until completely smooth, then pour into a large bowl.
- Whisk the chia seeds and sweetener into the bowl, then cover and refrigerate overnight.
- Enjoy the following day!
This Blueberry Lavender Chia Seed Pudding is perfectly sweet and floral, and surprisingly filling. Enjoy!
