Healthy Berry Swirl Ice Cream
Healthy Berry Swirl Ice Cream! It’s ice cream at its best without the refined white sugar, excess heavy cream and eggs. Here we’ve got a sweet and creamy vanilla ice cream that’s swirled with generous spoonfuls of two all-natural berry jams. I used blackberry and strawberry, but you can use blueberry and raspberry too… whateva tickles your fancy.
This is so good and healthy, you can enjoy it as dessert and breakfast. Greek yogurt makes this sweet and satisfying dessert as guilt-free as possible. With no added sugar and a punch of protein, it’ll be sure to power you through your day.

Healthy Berry Swirl Ice Cream
Ingredients
Ice Cream:
- 32 oz Plain, Nonfat Greek Yogurt
- 16 oz Organic Half and Half
- 2 tsp Liquid Stevia Extract
- 1 tsp Vanilla Extract or Vanilla Paste
- 1 tsp Xanthan Gum
- ¼ tsp Salt
Blackberry Swirl:
- ⅓ cup 100% Fruit BlackBerry Fruit Spread
- 2 tbs Lemon Juice
Strawberry Swirl:
- ⅓ cup 100% Fruit Strawberry Spread
- 2 tbs Lemon Juice
Instructions
- In an electric stand mixer bowl fitted with a whisk attachment, add the yogurt, half and half, stevia extract and vanilla paste. Turn the stand mixer on low speed. Mix until smooth.
- In a small bowl, whisk together the xanthan gum and salt. With the stand mixer running, sprinkle in the dry ingredients. Increase the mixer speed to medium.
- Churn the ice cream batter according to your ice cream machine’s instructions.
- In a small bowl, whisk together the blackberry spread and lemon juice. In another small bowl, whisk together the strawberry spread and lemon juice.
- Scoop ⅓ of the ice cream into a freezer-proof container (I used an extra tall loaf pan), spread it out, then spread on ¾ of the blackberry jam mixture. Scoop another ⅓ of the ice cream on top, spread it out, then spread on ¾ of the strawberry jam mixture. Scoop the remaining ice cream on top, spread it out, then drizzle on both of the remaining fruit spreads. Cover and freeze until it's the texture you prefer (for me, it takes around 3 hours). Serve and enjoy!

There nothing I love more then a huge bowl of ice cream on a warm summer day! I’m super happy that this ice cream is healthy, it means I can eat more of it :p
hey! do you need to stir the mixture every 30 minutes for three hours or pop it into the freezer and forget about it?
You would churn it in the ice cream maker, so you wouldn’t have to stir it in the freezer 🙂

After churning the ice cream in the ice cream machine, you don’t need to stir it at all. Just leave it in the freezer for a few hours until it’s the perfect texture! 🙂

I made it this afternoon and ate some as soft serve and — OH MY GOODNESS IT WAS THE BEST ICE CREAM I’VE EVER HAD! When I took my first bite, I said “Oh wow I’m eating real ice cream… with sugar and cream!” Except this is healthy — so I wasn’t. Thank you so much for the recipe!
