Course: Breakfast

If you want even creamier oats with a hit of protein, add ¼ cup of Greek yogurt to the recipe.  If you’re vegan, feel free to stir in 1-2 tablespoons of vegan vanilla protein powder (I like SunWarrior) plus a splash more of milk.

I think that makes this like, the healthiest breakfast EVA!  100% whole grain, no added sugar, 5g of fiber, 6g of protein…  this is what breakfast cereal companies wish they could boast on their cardboard boxes, but can’t, because they’re all full of refined flours and grains, high-fructose corn syrup and preservatives.

Tsk tsk!

I like to top my oats with a drizzle of melted coconut butter.  It looks like icing.  That, or I stir 1 tablespoon of natural almond butter into the mix before refrigerating overnight.  I like the strawberry-almond flavor combo, but adding the almond butter really makes this breakfast more filling and satisfying, while also forming a complete protein  😀

  2. What a great breakfast/dessert recipe! I love oatmeal and strawberries together!

  3. Had this for two mornings in a row. After seeing me eat it the first morning, my husband asked me to make one for him, too. We love it. I could have this 3-4 times a week. (Gotta have my breakfast burrito on Sunday.)
