Healthy Reese's Oatmeal

This Healthy Reese's Oatmeal is perfectly peanut buttery, chocolatey, sweet, rich and filling, yet low sugar, high fiber, high protein, gluten free, dairy free, and vegan.  This is the most decadent, secretly healthy breakfast oatmeal on the planet, and it’s super easy to make with only 5 ingredients!

Ingredients

  • 1 cup  Quick Cooking Oats
  • 2 cups Unsweetened Vanilla Almond Milk
  • 4 packets Natural Sweetener (steviaTruvia, etc.)
  • pinch of Salt
  • 3 tbs Natural Peanut Butter
  • 1 tbs Mini Dark Chocolate Chips or No-Sugar-Added Chocolate Chips

Instructions

  • In a large microwave-safe bowl, stir together the oats, almond milk, Truvia and salt. Microwave for 3-4 minutes, or until the oats have absorbed most of the liquid.
  • Remove the bowl from the microwave and stir in the peanut butter.
  • Scoop into serving bowls and top with the chocolate chips. Let the chocolate melt on top and enjoy!

  1. This looks delicious!! Peanut butter and chocolate is one of my favorite combos. 🙂 I will definitely try this. I’m gonna try soaking my oats for 24 hrs in some apple cider vinegar, water, and rye flour to help break down the phytates.

  12. I like the idea of your recipes, however, I would like real stats even if just estimated. Now I need to estimate the calories and nutrition before deciding if it is worth trying. I don’t see a lot of books being sold that way. If your book is as vague on stats as your blog, you will never catch on. Calories are king, doesn’t matter much the source. I like your ideas, but I don’t know if being loyal here is worth the effort.

      Thanks for sharing your concern, however, I am a full-time college student with a full-time job… after making a recipe, photographing it, writing the post, etc., I just don’t have the time to make nutrition labels for 100% of my recipes. Most of my posts have them, some don’t. I’m sorry about your frustration.
      I just wanted to let you know that all the recipes in my book have nutrition labels. Hopefully that helps you! 🙂
