Healthy Single-Serving Microwave Coffee Cake
I used to think Coffee Cake was a coffee-flavored cake. I mean, wouldn’t that make sense?? But apparently it’s not. It’s just a cake that’s meant to be enjoyed with a cup of coffee.
While there are countless recipe variations, Coffee Cake usually consists of a basic Vanilla Cake with a layer or two of cinnamon-sugar, which is sometimes topped off with a crumble or streusel.
But, being the lazy butt that I am, I wanted all the flavors of Coffee Cake without all the effort and time waiting for it to slowly bake away in the oven.
So I made an instant microwavable Coffee Cake.
A HEALTHY instant microwavable Coffee Cake.
It starts off with a basic Single-Serving Vanilla Cake which is then filled with a cinnamon-sugar swirl inside, plus a cinnamon-sugar topping for extra flavor. And in case you haven’t guessed it already… IT IS DELISHHH 😀
Healthy Single-Serving Microwave Coffee Cake
Ingredients
Coffee Cake
- 28g (¼ cup) Coconut Flour
- 3 packets Natural Sweetener
- ½ tsp Double-Acting Baking Powder
- pinch of Salt
- 105g (7 tbs) Unsweetened Vanilla Almond Milk
- 62g (¼ cup) Unsweetened Applesauce
- 1 large Egg
- 1 tsp Vanilla Extract
- ½ tsp Natural Butter Flavor
Instructions
- In a tiny bowl, stir together the cinnamon and packeted sweetener. Set aside.
- In another bowl, whisk together the coconut flour, packeted sweetener, baking powder and salt.
- In a larger bowl, whisk together the almond milk, applesauce, egg and extracts. Dump the dry ingredients over the wet ingredients and whisk together.
- Pour half of the batter into a large mug, then sprinkle on about half of the cinnamon-sugar mixture. Pour the rest of the batter in the mug, then sprinkle on the remaining cinnamon-sugar mixture.
- Microwave for 4 minutes, or until the surface springs back when tapped. Let cool, then enjoy!
Make sure you use a large enough mug, otherwise this will happen to you… *palm to forehead*
I may or may not have burned my tongue eating this because I’m uber impatient it’s friggin’ delicious… just a little warning because I can see the same thing happening to someone else (aka you) 😉

Hi i see this recipe says 14 grams protein. Is this a typo??? It only has one egg and no other sources of protein. Did u forget ingredient or something like a protein powder? Thanks… other wise this looks AMAZING. THANKS … LOVE YOUR RECIPES ?

1/4 cup Coconut Flour has 7g protein, the large Egg has ~6-7g, and the Almond Milk contributes a tiny amount too. Hope you like the cake!
Is there another flour you could sub in and have this work properly? Unlike everybody else who can enjoy coconut products which are apparently healthier than most alternatives…. I’m allergic to coconut… I know, most random allergy EVER…. so I can’t use the flour you are using, but this recipe looks/sounds wonderful…. just wasn’t sure what you would sub in if you were omitting coconut flour.

I’m not sure if the coconut flour can be replaced here. Coconut flour is probably the strangest ingredient ever, it absorbs SO much liquid, it’s like a sponge. I would recommend trying my Vanilla Microwave Cake recipe instead of the cake recipe in this post. Hope you like the Coffee Cake 😀
OMG! I’ve been looking for a good coffee cake recipe for a while and yours look so good. I bet with the addition of walnut would make this recipe delicious. I have to try making this one! 🙂

Can I use banana puree instead of applesauce?
I haven’t tried using banana puree in place of the applesauce but it’s worth a try! Just note that you’ll get a hint of banana flavor in the final cake 🙂
