Healthy Blueberry Lemon Ricotta Parfaits

These picture-perfect Healthy Blueberry Lemon Ricotta Parfaits require just 4 ingredients and a few minutes to make from start to finish. These are a real crowd-pleaser — everyone absolutely loved these parfaits!
I adapted this recipe from one of my favorite bloggers, Carolyn from All Day I Dream About Food. These are the changes I made:
- Used 16oz Part Skim Ricotta instead of 15oz Whole Milk Ricotta
- Used Blueberries instead of Blackberries
- Increased Lemon Zest, 2 tsp to 1 tbs
- Increased Stevia Extract, 16 drops to 1 tsp
- Omitted Powdered Erythritol
- Omitted Chopped Hazelnuts
These Blueberry Lemon Ricotta Parfaits are perfection!
The ricotta layers are surprisingly rich and incredibly creamy. Not too sweet, but sweet enough to satisfy your dessert cravings.
The tart and refreshing lemon juice and lemon zest help balance out the richness of the ricotta, brightening up the overall flavor.
The blueberries are sweet and juicy, and complement each layer of lemon-ricotta perfectly.
Healthy Blueberry Lemon Ricotta Parfaits
Ingredients
- 16 oz Part Skim Ricotta Cheese
- 2 tbs Lemon Juice
- 1 tbs Lemon Zest
- 1 tsp Liquid Stevia Extract
- 2 cups Fresh Blueberries
Instructions
- In a blender (I used my NutriBullet), add the ricotta, lemon juice, lemon zest, and stevia extract. Puree until completely smooth and airy.
- Add some blueberries to the bottom of 4 parfait or glass cups, then layer on the ricotta fluff. Keep alternating the two until everything is used up. Cover and chill for 2+ hours.
- Serve with whipped cream and extra blueberries, or as is. Enjoy!
