Healthy Fluffernutter Smoothie
Want a super decadent, thick and creamy Fluffernutter Smothie… for BREAKFAST?? Well, now you can with this secretly healthy recipe! Yes, I’m serious.
This Fluffernutter Smoothie is incredibly rich and smooth, it doesn’t taste healthy in the slightest.
It’s perfectly (and naturally) sweet… with none of the high-fructose corn syrup.
It’s thick and creamy… without any of the sugary ice creams or hydrogenated oil-filled Nutter Butters.
It’s filling and 100% satisfying… it’s got 37g of satiating protein, 6g of fiber and 6.5g of healthy fats.
BOOM.
Healthy Fluffernutter Smoothie
Ingredients
- 2 cups Plain, Nonfat Greek Yogurt
- 1½ cups Unsweetened Vanilla Almond Milk
- 8 packets Natural Sweetener (stevia, Truvia, etc.)
- 120g (1 cup) Peanut Flour
- 8 Ice Cubes
- All-Natural Mini Marshmallows (for topping)
Instructions
- In a high-speed blender (I used my Vitamix), blend together the Greek yogurt, milk and sweetener.
- Add the peanut flour and ice and blend until completely smooth.
- Serve immediately with the mini marshmallows, or store in the refrigerator for later.
I totally wasn’t expecting such a high protein content! When I was chugging enjoying this smoothie, all I could think was, “Wow, this is probably a total calorie- and fat-bomb… OH WELL! It tastes so good it’s worth it!”
Little did I know at the time that it was actually low fat, low sugar, high fiber, and high protein. I think that’s what they call, “winning” 😉
Yeah, I can already tell that this smoothie is going to be a staple for me throughout the next few months. I’m in my final year in university — *does embarrassing happy dance* — so all I need are quick and easy, secretly healthy dessert recipes to help me bust out this last semester of mine.
To finish strong, you gotta fuel up on healthy food…
And that totally includes this Healthy Fluffernutter Smoothie 🙂
Enjoy!
