To tell you the truth, I’ve never made French Toast before this…  for some reason it intimidated me.

What if I soak the bread too long?
What if it turns out soggy?
What if it tastes like scrambled eggs?
What if, what if, what if???

I usually stick with the easiest of breakfast items, like Banana Pancakes or DIY Cinnamon Crunch Toast Cereal.  Thankfully, my first time making French Toast worked like a charm.  This Healthy French Toast is magical.  It’s soft and delicious with an enticing crispy outer layer.

Instead of using white bread, we start off using Ozery Bakery’s Multi Grain One Buns — the most delicious whole grain bread to ever enter my face.

We start the Healthy French Toast-making process by slicing the One Buns into bite-sized pieces (for me, I cut each One Bun into 6 wedges, but you can cut them however you like).  Then we “dredge” the wedges in a mixture of eggs, egg whites, vanilla extract, and cashew milk (you can use whatever milk you prefer).  No need for using day-old bread for these Healthy French Toast Bites!  The One Buns are sturdy and hearty enough on their own so you don’t need to worry about them falling apart.  Simply cook the wedges over medium heat, or until browned, then flip and repeat until completely cooked through.  Once all the wedges are cooked, it’s time to serve and EAT!

I topped these Healthy French Toast Bites with a dusting of powdered erythritol, a sprinkle of cinnamon, sliced bananas, and a big glug of pure maple syrup.  Other sweet toppings work just as well — honey, jam, fruit, whipped cream, chocolate chips…  it’s all good!
