My family devoured that Maple Pumpkin Pie Mousse Pudding a few weeks back, and after hearing comments (or hints?) here and there about it, I knew I needed to make it again.  Don’t tell my family, but I am secretly reserving my canned pumpkin for when my next pumpkin withdrawal symptom strikes.  Or when I feel like I need some more vitamin A…  😉

Butterscotch Pudding is a popular dessert that desperately needed some healthifying, so I decided this would be a great flavor to try out after the Pumpkin Pudding.  Once again, my family loved it.  The texture is firm like a mousse, yet smooth like a pudding.  This Healthy Butterscotch Mousse Pudding tastes incredibly rich and satisfying, it’s hard to believe that what you are eating actually has some health benefits!

Healthy Butterscotch Mousse Pudding

Ingredients

Instructions

  • In a large bowl, whisk together the coconut milk, maple syrup, molasses, butterscotch flavor, vanilla extract, and butter flavor.
  • In a small bowl, whisk together the protein powder, sucanat, flaxseed, and sweetener. Add to the wet ingredients and whisk together until fully incorporated.
  • Pour into serving bowls, cover, and refrigerate for ~4 hours to firm up. Serve and enjoy!

Recipe Notes

**Soy protein powder absorbs A LOT of liquid. If you want to sub the soy protein, you can try casein protein powder or brown rice protein powder. I haven't tried subbing the protein powder here but feel free to try it out if you like!

This Healthy Butterscotch Mousse Pudding is much better than those unhealthy storebought types in the little plastic tubs.  I calculated the nutrition facts for the original recipe (by FoodNetwork).  And it’s disturbing…  1/6th of the recipe has 520 calories, 30g fat, 200mg cholesterol, and a whopping 40g of sugar!!

Can you believe the difference??  My recipe has:

  • 270 less calories
  • 23g less fat (and 14g less of the unhealthy saturated fat)
  • 18g less sugar
  • fiber and protein
  • NO cholesterol

Amazing!  And you would never suspect that this recipe is packed with protein and free of refined sugar, butter and eggs.  If you are craving for something rich and sweet and packed with butterscotch flavor, this mousse/pudding is it!
