Healthy Chocolate Chia Seed Pudding
After making nearly a dozen chia seed pudding variations in my humble kitchen/healthy dessert factory (including Strawberry Vanilla, Ginger Peach, Blueberry Lemon Rosewater, and Mango Cardamom), I noticed a pattern… every single recipe had fruit! Now, I’m not saying that’s not a bad thing, fruit is good for ya! BUT, I was missing one crucial flavor: CHOCOLATE Chia Seed Pudding.
While fruit may be good for the body, chocolate is good for the soul.
This Chocolate Chia Seed Pudding is good for your body and soul.
Oh, and it’s pretty nice on those taste buds as well.
This Healthy Chocolate Chia Seed Pudding is sweet, packed with yummy cocoa flavor and lots of vanilla to round it all out. The texture is smooth and a slight crunch in every bite. It’s the perfect treat to satisfy your health-conscious sweet tooth!
Healthy Chocolate Chia Seed Pudding
Ingredients
- 6 tbs Chia Seeds
- ¼ cup Unsweetened Dutch Processed Cocoa Powder
- 7 packets Natural Sweetener (stevia, Truvia, etc.)
- tiny pinch of Salt
- 2 cups Unsweetened Vanilla Almond Milk
- 2 tsp Vanilla Extract
Instructions
- In a shaker cup, add the chia seeds, cocoa powder, sweetener and salt. Pour in just a ½ cup of the milk. Cover with the cap and shake vigorously.
- Add the rest of the milk and vanilla and shake again. Pour evenly into jars, seal tightly, and refrigerate overnight.
- Serve and enjoy the next morning!
Yup, that’s right! Just 160 calories per serving, plus 13g of filling fiber and 8g of plant-based protein. Yes, puh-lease.

How many servings does this make ? It says to put in individual jars but how many servings do we get from this entire recipe don’t want to eat 2 servings at one time lol! Thanks can’t wait to try 🙂
I think the serving size is easy to miss. It’s the orange ribbon at the very top of the recipe box. This recipe makes 3 servings 🙂
When you say 7 packets of sweetener, how many teaspoons/tablespoons? I usually use bulk granulated sweetener (Splenda-please don’t judge! 😉 ) so I’m not sure how much to use in this yummy looking recipe.
I used Truvia for this recipe, which is 2x as sweet as sugar. According to Truvia’s conversion chart, 7 packets is about equal to 2 tbs of their spoonable version (or 5 tbs of sugar). I don’t have any experience with Splenda so I’d recommend checking out their conversion chart… or just go to a coffee shop and steal 7 packets of Splenda 😉
Thanks Jessica! With Splenda in the bulk box, 1 spoon of Splenda equals 1 spoon of sugar, so I guess I would use 5 tbs. For 3 servings, that sounds about right. I’ll see how it goes!
I’m looking for a thick chia pudding, like the Jell-O pudding. Is this thick? If not, how can I thicken it? I’ve tried other chai recipes and didn’t like them because they weren’t thick enough. I tried to add rice flour, but it didn’t work.
I found this chia seed pudding thick enough for my taste, but if you want a VERY thick pudding, feel free to reduce the milk by a few tablespoons 🙂

how many cups of chia pudding does this recipe make and how much would be a single serving?
The recipe box shows the servings in the recipe (3). I didn’t measure each serving, but just divide the batch into 3 🙂
