Healthy Red Velvet Chia Seed Pudding

Servings: 2 servings
Prep Time: 10 minutes
Total Time: 10 minutes

Ingredients

  • 36g (3 tbs) Chia Seeds
  • 10g (2 tbs) Unsweetened Dutch Processed Cocoa Powder
  • 4 packets Natural Sweetener (I used Truvia)
  • pinch of Salt
  • ¾ cup + 2 tbs Unsweetened Vanilla Almond Milk
  • 2 tbs Roasted Beet Puree (see this post for directions)
  • 1 tsp Vanilla Extract

Instructions

  • In a shaker cup, add the chia seeds, cocoa powder, sweetener and salt.  Pour in just a ½ cup of the milk.  Cover with the cap and shake vigorously.
  • Add the rest of the milk, beet puree, and vanilla extract, and shake again.  Pour evenly into jars, seal tightly, and refrigerate overnight.
  • Serve and enjoy the next morning!
