Healthy Peanut Butter and Jelly Thumbprint Cookies
These super easy, secretly healthy Peanut Butter and Jelly Thumbprint Cookies are white sugar free, low fat, high fiber, high protein, gluten free and vegan, but you’d never know it.
These chewy cookies are totally addicting, packed full of that classic PB&J flavor and will be ready in a flash!
My classes have been going pretty well this semester. I love them all (with the exception of one) and with each day I get closer and closer to the finish line. These healthy Peanut Butter and Jelly Thumbprint Cookies will definitely keep my motivation up to power through the semester. These completely addictive PB&J treats are the ultimate snack — they’re delicious and nutritious!
Last week I had an intense craving for peanut butter (hah, like always). I had a little bit of 100% fruit jelly leftover in my fridge from making a few Homemade Peanut Butter and Jelly Uncrustables for myself (I made them gluten free using gluten free bread).
I thought about making another PB&J treat and cookies immediately came to mind. Specifically, those Thumbprint Cookies from last year. Those are made with almond butter, and I thought, why not make a peanut butter version?? So I did… and they were deeeelicious!
Healthy Peanut Butter and Jelly Thumbprint Cookies
Ingredients
- 128g (½ cup) Natural Peanut Butter (no sugar/oil added)
- 92g (6 tbs) Unsweetened Vanilla Almond Milk
- 1 tsp Vanilla Extract
- 1 tsp Liquid Stevia Extract
- 90g (¾ cup) Oat Flour
- 48g (¼ cup) Homemade Vanilla Sugar (or dry sweetener of choice)
- 30g (¼ cup) Peanut Flour
- 1 tsp Double-Acting Baking Powder
- ¼ tsp Salt
- ¼ cup 100% Fruit Strawberry Spread (any flavor works!)
Instructions
- Preheat the oven to 350 degrees Fahrenheit and line 2 cookie sheets with parchment paper.
- In a large bowl, stir together the peanut butter, almond milk, vanilla extract, and stevia extract.
- In a small bowl, whisk together the oat flour, vanilla sugar, peanut flour, baking powder and salt. Dump over the wet ingredients and fold together.
- Use a cookie scoop to portion the dough out onto the baking sheets. Roll the dough balls between your hands and flatten them between your palms, fixing any cracks on the edges of the cookies if you want.
- Use your thumb or a teaspoon measure to press in the center of the cookie rounds and fill with about ¾-1 tsp of fruit spread. Bake for ~10 minutes. Slide the parchment off the hot baking sheets and let cool. Serve!

These Peanut Butter and Jelly Thumbprint Cookies are perfect as a dessert and mid-day snack, that’s how healthy and nutritious they are.
I would even consider these cookies to be a breakfast food. Because I ate these for breakfast. Hehehe 😉
I decided to compare my recipe’s nutrition label to Wilton’s PB&J Thumbprint Cookie nutrition label. Wilton’s recipe is so unhealthy it doesn’t even deserve to have the word “nutrition” on the nutrition facts label… ugh, can you believe 3g of dangerous/deadly trans fats can sneak into just two cookies? The recipe barely has any fiber or protein, yet it has quite a bit of granulated white sugar. My PB&J cookies are a nutritionally balanced snack with all-natural healthy fats (no hydrogenated oils or shortening here!), a good amount of fiber and substantial amount of complete proteins!
I packaged some cookies on the counter for my dad to bring to work and share with his coworkers but a couple of my friends came over and those seven cookies dwindled down to two. Thank goodness I was selfish and reserved HALF of the batch on a separate plate hidden away from the public just for me. I feel bad… but not really 😉
I refilled the container on the counter back to seven cookies, and sadly looked at the ONE cookie I had leftover for myself. So sad. But everyone liked the cookies so (I guess) it was worth it 🙂
