Healthy Homemade Wild Jungle Peanut Butter
Ingredients
- 4½ cups Wild Jungle Peanuts (I bought mine were raw from Whole Foods)
- ½ tsp Liquid Stevia Extract (or ½ cup Stevia in the Raw)
- ⅛ tsp Salt
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Lay the peanuts in a single-layer on a large baking sheet. Roast at 5-minute intervals, tossing the peanuts between each interval, for about 20 minutes total, or until fragrant. Let cool slightly.
- Add the peanuts to a food processor and grind until smooth and buttery, scraping down the sides when necessary (takes about ~10 minutes total).
- Add the sweetener and salt to taste. Grind again until smooth. Scoop the nut butter into a jar, seal tightly, and refrigerate to store.
You can’t go wrong with only three ingredients!
The nutrition facts for wild jungle peanuts are pretty much the same as regular peanuts. The real difference is seen when comparing the ingredients of this homemade Wild Jungle Peanut Butter with storebought peanut butter. Storebought PB often contains hydrogenated oils (aka, deadly trans fats), sugar and way too much salt… but not this one!
