Gluten Free Chocolate Birthday Cake with Healthy Chocolate Frosting

Healthy Chocolate Birthday Cake with Chocolate Frosting (To Celebrate My 21st Birthday!)

It’s my birthday!  The big one.  I’m turning 21 today.  Yes, TWENTY ONE!  So being cognizant of the excess alcohol I’m going to be drinking tonight (obviously) I thought I’d make a healthy dessert to balance out all that booze.  That’s how it works right?  (No, it’s not, sadly…  but one can hope).  This Healthy Chocolate Birthday Cake with Chocolate Frosting has made my birthday weekend my best one yet — it is sweet and moist and chocolatey and just screams,

“CELEBRATE, GIRL!!  You’re FINALLY 21!!  Now go stock all of your kitchen cabinets with vodka.”

This Healthy Chocolate Birthday Cake is so tall I can’t even bring my fork all the way to the bottom!  But that’s a good thing, it makes you feel like you have a never-ending slice of cake.

Looky here.  See how soft and moist it is?  Definitely something you can cram into your face.

It’s my birthday, I can cry eat an entire cake if I want to.  JOIN ME  🙂

Recipe Notes

The only difference between this cake and the Chocolate Therapy Cake is you bake the cake in TWO 8" pans, not three, and you bake the cakes for ~55 minutes (or until the center of the cakes spring back when tapped) instead of 42 minutes.  Once the cakes have completely cooled, slice each cake layer in half to create four layers. It helps to use a very sharp and LONG knife, go eye level with the cake to make sure you slice it straight (no one wants the leaning cake of Pisa!).  Once you frost the cake, top it all off with Homemade Rainbow Sprinkles!

  1. WOW! So glad I found this blog!! My dream is to open a cafe someday, and I want to keep the desserts really healthy. I think I’m going to be visiting this blog often for inspiration 🙂 And the kitchen scale would be helpful 😀
My 21st bday was (un)fortunately my cousin’s wedding day 😛 So, yes I got to be with ALL my family, which is rare because we’re spread out all over the country, but my thunder was completely stolen 😉

  2. I had a super low key 21st birthday. Just went to the grocery store and bought cheap wine, went home and drank it with my boyfriend and 2 friends. I think we had mcdonalds too. OH man.

  3. I haven’t had my 21st birthday yet, but when I do, I hope it includes a cake like this more than any booze 🙂

  4. Congrats!! I hope you enjoy your birthday, must be fun turning 21! Those scales look so fab, I’m so bummed I cannot entry as I am not a US resident… However, this cake looks so yummy and I hope to make it some day in the near future 🙂

  5. Oh and I have been wanting to ask, what is your personal reason for using so much brown rice protein powder instead of whey etc (if you don’t mind me asking)? Would you say brown rice protein is comparable with whey protein in regard to health benefits and nutritional value? Thank you so much if you take time to answer me 🙂

    • dessertswithbenefits

I use brown rice protein powder because I am sensitive to whey. Brown rice protein powder absorbs a lot more liquid than whey, that’s why I like to use it in frostings instead of powdered sugar. In terms of health benefits, both protein powders have all the essential amino acids required by the human body. The protein in whey is probably more bioavailable than rice, but rice contains fiber and is lower glycemic. I think it all depends on your taste, preference and what it is eaten with. Hope this helps!

  8. Partied like a rock star!! 🙂

  9. For my 21st I plan to go out with some of the girls from work and we are gonna live it up! And then, probably go home and eat awesomely fried food and cake.

  10. 21 is my birthday next year and I’m hoping I’ll be able to spend it with family, or at least a night out with my sister. Unfortunately its smack-dab in the middle of the December exams period so it’s a bit of a guessing game until mid-November as to whether or not I get to make plans!

  11. I baked a rum cake for my birthday and made skittles vodka with my college roommates. We also went to a bar for some martinis!

take a before and after picture:)

  18. I spent my 21st at my Brothers graduation from college. Not very exciting but I have plenty of birthday parties ahead of me and he deserved a day celebrating him after studying Physics for 4 years! 🙂

  19. I went out to dinner with my mom and dad. We had the most amazing sushi and then I treated myself to a giant slab of red velvet cake! Oh so good. Simple yet perfect

  20. On my 21st, I went out to my favorite seafood restaurant to celebrate and got the most wonderful gifts from my family–including some beautiful wine glasses

  21. Well….not to date myself but I was 21 about 24 years ago 😮

It was your typical “21st” birthday celebration. My husband (yes I was also married young) and I with many of our friends (known from high school) went out to dinner to have my favorite all time type of food (Mexican) and I got to officially order my first alcoholic drink (margarita), had the staff sing happy birthday to me and ate a delish dinner. Then we all went to a club where I was showered with drinks from people I didn’t even know (only because my so called friends were “announcing” that it was my 21st birthday. I was a smart girl (well at least I thought I was smart) and tried to pace myself and not over due it. The next morning, lets just say I wasn’t feeling my best BUT…it was one of the most best birthdays ever.

  22. Nothing, really.

  23. I didn’t do much for my 21st. I think I just went out with one friend to celebrate. I’m not much of a drinker though!

  24. Happy Birthday Jessica! And what an scrumptious cake to calebrate it, I loove it 🙂

  25. Happy Birthday! I’m so impressed – at that age I was too immature to have created a blog (if they’d had those back in the stone age :D), but you’ve managed to have a beautiful one.

I certainly don’t remember what I did on my 21st birthday; back then the legal drinking age was 18, so I know that I wasn’t out getting my first “legal” drink when I turned 21.

  26. Happy Birthday!! On my 21st, I don’t want to do the typical alcohol party, I want to have my first drink in some exotic place. Piña coladas in paradise anyone?

  27. My birthday is on Christmas, so for my 21st birthday I just spent it with my loved ones 🙂

  28. My older sister and brother in law took me to a nice italian restaurants where I tried amaretto sour which is amazing

  29. I had food poisoning on my 21st birthday. :/

  30. To be honest, I don’t remember if I did anything for my 21st birthday. Which is sad because I’m only 22. I know I had cake and ice cream, but that’s about it!

  31. Wine Tasting!!

  32. Charae Gilbert

Awesome. The Peanut Butter Dark Chocolate Shortbreads were a hit in my house. The Coconut Chocolate Krispies are a serious addiction. The chocolate chip cookies lasted not even a day. The peanut butter balls did not last more than a few minutes. Next on my list is the cookie dough brownies and THIS. ::DROOL::

  33. Charae Gilbert

Oh yeah. My 21st birthday was a little drinking, dancing, socializing, and eating delicious food…

  34. I want to go to Vegas to the PBR and then walk the strip.

  35. Oh my I don’t remember what if anything special I did for my 21st birthday. . it’s been so long ago. . we never did too much extras for birthdays just maybe some family time and maybe go to a restaurant for a meal.

  36. This cake looks delicious! For my 21st birthday, I had to work! But I was able to celebrate it over a nice dinner with my family and close friends afterwards.

  37. For my 21st birthday, a few friends and I headed to one of the local bars at midnight for a couple of drinks. The night of my birthday, my boyfriend set up a party at the same bar with some of our friends and family. It was a night filled with wonderful memories.

  38. Hi Jessica! Your cake looks great, and so you do!
Happy B-day, in 4 years I will turn 21 too! I hope you had a great day!!
I wanted to ask you.. can I substitude the coconut flour for AP flour? I’ve never heard of it but it sounds too expensive for me… 🙁
And you’re so great, giving away kitchen scales, everyone should have one!! mine was white but it’s alreay turning yellowish because it’s old 😛

  39. I was actually living in England when I turned 21, so it wasn’t such a big deal. I just went out for dinner and drinks with friends!

  46. I went to a pool party and gt drunk

  47. When I turn 21, I’m going to have a very nice get-together with all the people I love. We would all sit around the fire (I was born in late November.) and reminisce about all the wonderful times we’ve shared, and we’d obviously be drinking delicious hot tea. Later we’d have some homemade vegan pumpkin pie! 😀

  48. Not yet 21, but living in Hong Kong means that I only have 2 more years! When I turn 21 I will probably be back in the states so that means a huge party, with all my uni friends. Probably lots of alcohol involved, and lots of cake. Maybe I’ll make a cake that has alcohol! Sounds good, an alcoholic cake and a Tim Burton marathon.

  49. Happy Birthday!! As for what I actually did, sadly I can’t remember!
