Healthy Chocolate Birthday Cake with Chocolate Frosting (To Celebrate My 21st Birthday!)

It’s my birthday!  The big one.  I’m turning 21 today.  Yes, TWENTY ONE!  So being cognizant of the excess alcohol I’m going to be drinking tonight (obviously) I thought I’d make a healthy dessert to balance out all that booze.  That’s how it works right?  (No, it’s not, sadly…  but one can hope).  This Healthy Chocolate Birthday Cake with Chocolate Frosting has made my birthday weekend my best one yet — it is sweet and moist and chocolatey and just screams,

“CELEBRATE, GIRL!!  You’re FINALLY 21!!  Now go stock all of your kitchen cabinets with vodka.”

This Healthy Chocolate Birthday Cake is so tall I can’t even bring my fork all the way to the bottom!  But that’s a good thing, it makes you feel like you have a never-ending slice of cake.

Recipe Notes

The only difference between this cake and the Chocolate Therapy Cake is you bake the cake in TWO 8" pans, not three, and you bake the cakes for ~55 minutes (or until the center of the cakes spring back when tapped) instead of 42 minutes.  Once the cakes have completely cooled, slice each cake layer in half to create four layers. It helps to use a very sharp and LONG knife, go eye level with the cake to make sure you slice it straight (no one wants the leaning cake of Pisa!).  Once you frost the cake, top it all off with Homemade Rainbow Sprinkles!

  1. I celebrated with my family. I also had a surprise “mini” party thrown by one of my best friends, which was so thoughtful and kind!

  2. Me and my twin sister did the “Tennessee Waltz,” a tradition of FSU students (Tallahassee, FL). We went to every bar on the Tennessee strip and ended at Bullwinkles, which is notorious for being very strict on fake IDs.

    I know we did this because our friends took pictures for evidence 😛

    I can’t wait to try this recipe! I just bought some coconut flour and I’m having a hard time with it so far.

  3. my parents took my to a chinese restaurant with the most ridiculously decorated drinks — umbrellas, fruit, sparklers, etc. hilarious.

I’ve been a big fan of your blog for several months now (actually, your recipes have helped me a great deal in my diet transition) and I’m so happy to be able to share in such a memorable day with you! I hope you had a fun twenty-first birthday! I’m just a few years older than yourself, but at the time of my twenty first I was very much opposed to alcohol and failed the rite of passage that is drinking on your birthday. I spent it quietly with poorly made grocery-store cake (blegh, never again!) and a few good friends to pass the time with. Please tell me your birthday was far more better spent than mine was! 😛

  6. For my 21st (in 2 years!) I want to have one evening on fine dining with my cloest friends and family. A real occasion to dress up for and still remember the evening the morning after! (for everyone else anyway- im teatotal!)
    I will then have a big night out for all my other mates, a Disney themed dressed up night out!

  7. I just turned 21 in August! I celebrated with my family and close friends! My best friend, knowing that I am a health nut, made me a fruit cake – layers of a variety of fruits! It was so cool looking, and perfect for me! The weekend after my birthday, my close friends and I went to New York City for a fun day trip! Really had a wonderful 21st!

  8. I was in the school at the time & I worked in the evening/nights, so I was at work that night, but went out with friends that weekend.

  9. I am not 21 yet, but on my 21st, which will be on a Thursday this upcoming year, I plan on coming back to my dorm from classes and treating myself to a home spa day. Manicure, pedicure, possibly dye my hair for the first time. 🙂

    Then spend the weekend as stress free as possible! (Hopefully)

    Simple, calming, and I know I’ll need it! 🙂

  10. Happy Birthday! My 21st birthday was quite a long time ago.. LOL! I didn’t do anything too exciting… just dinner and a nice evening with friends!

  11. I was in New York city and I went to a huge dinner out with friends and had champagne!

  12. A group of friends took me out to a fun salsa dancing/tapas restaurant, with champagne of course. I think we went out partying afterwards, but, uhhh, can’t remember. 🙂

  20. My birthday is oct. 17, so for my 21st birthday i bought myself a new car and transported all my friends to a haunted farm. We then followed with dinner and drinks!!

I made this cake for my boyfriend (been eating gluten free for a few years, but was recently confirmed to be gluten-sensitive by the docs) because I love how tall and moist your cake layers look. Sadly, when I tried this recipe, the layers turned out thin- half as tall as yours. The only changes I made was I used almond milk instead of soy and I used coconut oil instead of hazelnut oil- neither of which would have affected the height. The cake was delicious (his family raved about it for days) but i’m still worried about the height. Any ideas?

      I apologize! I totally forgot to add the last step for the cake directions, which is to slice each cake layer in half to make four layers. Thank you so much for letting me know, I updated the directions.
      And you’re right, the almond milk and coconut oil shouldn’t affect the height at all. All in all though, I’m so glad you guys liked the cake! That just made my day 🙂

      Wow! I’m so surprised the egg replacer worked! Seriously, I thought that was going to turn out very bad since there are so many eggs in the recipe.
