- In a bowl, stir together the oats, flaxseed, cocoa powder, packeted sweetener, and salt.
- Stir in the almond milk, beet puree, and vanilla extract. Stir until completely combined. Cover and refrigerate overnight. Serve and enjoy in the morning!

Seriously, this is one balanced breakfast! With a whopping 10g of protein, 11g of fiber, 8g of healthy fats and none of the added sugar, this will surely keep you full and satisfied all morning long!

Grinding up the oats will give an even MORE cakey feel! I love doing this with my overnight oats. Anyways, love the red velvet idea. I have some beetroot powder that I’ve been meaning to use for FOREVER and need more red velvet-inspired recipes!

The beet didn’t mix at all with the rest of the ingredients, so there were chunks of beet floating around. Every time I got a chunk, it would taste so bad because I just taste beet instead of chocolaty goodness. Very disappointing! 🙁
You’re supposed to blend the beets before adding it to the oats lol, that’s why the recipe calls for “puree” …. no one is supposed to be eating chunks of beets in oats, ew!!
