Healthy Cherry Chocolate Chip Blondies with Cherry Frosting
These healthy Cherry Chocolate Chip Blondies are dense, fudgy, and packed with chocolate chips! You’d never know they’re made without any added sugar, butter, or flour!
Oh yes, these are sugar free, gluten free, dairy free, and vegan.
Oh! And how could I forget about the “cherry on top”?? Aka, the sweet CHERRY FROSTING!
But seriously, these chewy Cherry Blondies are ahhhmazing. They’re sweet and packed with fresh cherry flavor!
Thanks to all the chocolate chips, these Cherry Blondies are super decadent — you’ll swear they are unhealthy!
You know, I never thought I’d say this but there is a time and place for chocolate — which happens to be here and now — BUT, personally, I don’t think chocolate would match very well in some of my previous fruit-flavored blondies. I couldn’t imagine chocolate tasting very good in my Peach Blondies, nor could I see it pair well in my Blueberry Muffin Blondies, Strawberry Blondies or Raspberry-Lemon Blondies.
But Cherry Blondies? Yeah, chocolate will fit right in!
Healthy Cherry Chocolate Chip Blondies with Cherry Frosting
Ingredients
Blondies:
- 370g (1½ cups) Fresh Cherry Puree **
- 96g (½ cup) Granulated Erythritol
- 14g (1 tbs) Avocado Oil
- ¾ tsp Liquid Stevia Extract
- ¼ tsp Natural Cherry Flavor
- 160g (1 cup) Brown Rice Flour
- 120g (1 cup) Oat Flour
- ½ tsp Double-Acting Baking Powder
- ¼ tsp Salt
- ½ cup No-Sugar-Added Dark Chocolate Chips
Frosting:
- 105g (¾ cup) Powdered Erythritol
- 3 tbs Fresh Cherry Puree
- ⅛ tsp Natural Cherry Flavor
Instructions
For the Blondies:
- **Pit the cherries and puree in a blender until smooth. Measure 1½ cups and pour into a large mixing bowl, reserve 3 extra tbs of puree for the frosting.
- Preheat the oven to 350 degrees Fahrenheit and line an 8" brownie pan with parchment paper both ways.
- To the cherry puree, whisk in the erythritol, oil, stevia extract, and cherry flavor.
- In a small bowl, whisk together the brown rice flour, oat flour, baking powder, and salt. Dump the dry ingredients into the wet ingredients and fold together until the batter is smooth.
- Stir in the chocolate chips. Scoop the batter into the prepared pan and spread it out to the edges. Bake for ~30 minutes, or until the center of the blondies are firm when tapped. Let cool completely in the pan.
For the Frosting:
- In a medium-sized bowl, whisk together the erythritol, cherry puree, and cherry flavor. Spread onto the cooled blondies. Slice and serve! Store in an airtight container in the fridge for up to 5 days.
Can you believe one of these giant blondie wedges contains only 200 calories and 6g of fat? And can you believe that with such comforting decadence you also get 5.5g of fiber, 5g of protein, healthy fruit, and whole grains?
So don’t be afraid to grab a second serving, you will actually get some more benefits rather than consequences!

I love this idea Jessica, when I first saw the picture, I said she probably used beats again but the cherries really did the trick. I love bing cherries. You could probably freeze these to enjoy later after the cherry season is up. Really beautiful.

Can you create this without Xanthan gum?
I’m sure the xanthan gum can be omitted, but the blondies will not have the same chewy texture… they also won’t hold together as well. You can try adding 1 tbs of ground flaxseed or ground chia, but I’m sure the recipe will work out just fine 🙂
I will try with flaxseed and then let you know how it worked! It’s hard to find Xanthan gum in Finland and it’s not too enviromentally friendly to order it from the other side of the world.

These bars look freaking PERFECT! I really want to try with strawberry or raspberry puree too, just to see how the flavors will taste. Chocolate and cherries are delightful together! Who knew that cherries belong in a blondie recipe?! I’d 10000% try it, all together!
Right??? Even though I had to put the cherries by hand using one of my metal straws, it was totally worth it. Other fruit works in place of the cherries just fine! I’ve made so many fruity blondies on the blog already — peach, strawberry, blueberry, etc… all of ’em delicious! 🙂
